CRAWFISH PIE
Crawfish pie is actually not that common in Louisiana and can be difficult to find most of the year, even in New Orleans. Cajun’s usually eat their crawfish boiled, fresh out of the pot. Crawfish Pie will usually make its appearance during either Mardi Gras or Jazz Fest. During these times, there are thousands of tourists in town and the visitors go crazy for “authentic” Cajun delicacies like crawfish pie mentioned in the song… “jambalaya, crawfish pie, filé gumbo…” That said, this is a very tasty variation of the common Chicken Pot Pie.
1 lb. pkg. frozen, cooked crawfish tails
1 red bell pepper
1 green bell pepper
3 stalks green onions
1 can Cream of Mushroom Soup
1/2 c. breadcrumbs
1 tbsp. butter
Cajun seasoning
1 pkg. Pillsbury Pie Crusts (double crusts)
