CAJUN CORN SALAD
During summer, we like to grill quite often. Sometimes instead of potato salad, I like to do this cold dish. It’s a colorful, delicious side dish that goes great with anything off the grill to complete a well-rounded meal. Corn salads are wonderful in the summer heat and delicious with just about any meat you can grill. It’s simple and very easy to make, taking just a few minutes!
3 cups fire roasted corn
1 lg. green bell pepper
1 lg. red or orange bell pepper
1 sm. Red onion
olive oil
1 cup of cherry tomatoes
2 garlic cloves
paprika
cayenne pepper
Cajun seasoning
oregano
parsley
