RED BEANS & RICE
It doesn’t get more Cajun than a good bowl of Red Beans and Rice! Much like gumbo or jambalaya, there are countless different ways to prepare it. It was traditionally served on Mondays, because it could be made with the leftover ham bone or sausage from Sunday dinner. Monday was also laundry day, and it could be slow cooked while taking care of the laundry.
1 lb. pkg. red kidney beans
2 c. white rice
lg. green bell pepper
lg. yellow onion
1 bunch green onions
2 lbs. andouille sausage
Cajun seasoning
sea salt
black pepper
parsley flakes
granulated garlic powder
bacon grease or canola oil
hot sauce
