JAMBALAYA
There are so many different recipes for Jambalaya, you could almost make an entire cookbook of just the different variations of jambalaya recipes out there. Most have several things in common, rice, chicken, sausage, celery, bell pepper, onion, etc. Quite a few have shrimp and tomatoes. The great thing about jambalaya is that it is so versatile, you can add what you like and leave out what you don’t, and it still comes out tasting great! Enjoy!!
1 lb. andouille sausage
1 lb. bloneless skinless chicken thighs

ground paprika
ground cumin

1/2 c. diced tomatoes
1 lg. green bell pepper
2 celery stalks
1 bunch green onions
