HOPPIN' JOHN
Hoppin' John recipe is a classic Southern dish of black-eyed peas cooked low and slow, traditionally with rice, then flavored with smoked pork and loads of seasonings. It was always part of our New Years dinner, since you’re supposed to eat black-eyed peas on New Years for good luck in the upcoming year. I’ve had Hoppin' John many different ways. Normally it’s made with small pieces of ham. We always traditionally had a big ham on New Years and putting ham in the Hoppin’ John was a little much, so my mom used bacon and sausage to change it up. My wife can’t have pork, so I use smoked turkey or chicken and it turns out great!.
