Jiffy Corn Casserole

This is a must at our house every Thanksgiving.



Ingredients
  • 1 can whole kernel corn (drained)
  • 1 can creamed corn
  • 2 eggs (beaten)
  • 1 box Jiffy corn muffin mix
  • 1 stick butter, melted (or 1/2 c. oil)
  • 1 cup sour cream
  • 12 oz. Shredded cheese

Directions
  1. Preheat oven to 350 degrees
  2. Mix all ingredients except cheese.
  3. Sprinkle shredded cheese on top, after pouring mixture into baking pan.
  4. Bake in casserole dish or 9"x13" baking dish for 30 to 45 minutes or until fully cooked in center and golden.
